Japanese Double Bevel Yanagiba Knife 12.5 inch/ 310mm Shirogami #2 (White Steel) Stainless Clad. This knife is hand made by a 3rd generation blacksmith, Mr. Jun-ichi Ide of Shimabara, Nagasaki, Japan. The blade was forged from famous Shirogami #2 carbon steel clad in softer stainless steel. The core or edge is not stainless and it will rust easily. Please wash the knife after each use and dry completely. This knife is fitted with the traditional octagonal handle made of magnolia wood. This is specifically designed to slice sashimi. The knife comes with the original paper gift box. Important: This knife is hand made, and there may be some imperfection as to the appearance. Please examine the photos to determine if it is acceptable. Maintenance: Just wash the knife and handle with soap and sponge, rinse and dry. If you store it for an extended time, use of oil is necessary to prevent the rust on blade. Warning: The core/edge is not a stainless steel, so it will rust unless you dry it right after each use. Warning: Never wash in the dish washer! Warning: The blade is very hard and razor sharp, however, it is also brittle as with most of other Japanese knives. Cutting the bones, frozen food, hard root vegetable, etc, will likely result in chips and breakage. We cannot accept return if the knife has any damages.
